Welp, Fall is here. It was a rainy weekend that proved to my chilly bones that it’s true. Nothing says fall like chili. It’s the perfect meal to pop in the crock pot and enjoy after an evening of being outside in the cooler air all day long.
But just because it’s a fall dish doesn’t mean it can’t be CHUCK full of beautiful end of sumer produce.
And thanks to Gardein, I can create a meatless chili that ALL my family will enjoy.
This beefless ground has been like a dream come true for me, I’ve created all sorts of family recipes (fiesta cups) with it and if I never told them my family would NO idea it was meatless…and that’s just the way I intend to keep it 😉

Gardein Hearty Vegetarian Chili:
- 1 bag of Gardein Beefless Groud
- 8-9 small purple potatoes
- 1 can of diced tomatoes
- 2 cups of sliced zucchini
- 1 can of kidney beans
- homemade Chili Powder ( you can use store bought if you wish)
- 1/2 cup water
- 1/2 small onion diced
- 1 large avocado cubed
- In a crock pot on low heat add in your chili powder, Gardein Beefless Ground, potatoes, beans, water, onion and tomatoes.
- Cook for 4 hours
- Then add your zucchini cook for an additional hour
- Mix in avocado and serve.
This recipe is a great make and go which works perfectly for endless mornings that turn into days of enjoying fall weather.
